I love quinoa, and it is a great addition to any salad to make it heartier.
Here’s my easy, go-to quinoa and kale salad recipe! Let me know what you think.
Salad Ingredients (4 Servings):
2 cups spinach
2 cups chopped kale
½ cup cooked quinoa
½ cup dried cranberries or pomegranate arils
½ cup sunflower seeds
¼ cup goat cheese (get the cranberry-infused goat cheese if you can find it!)
Vinaigrette Ingredients (4 servings):
¼ cup of extra virgin olive oil
¼ cup apple cider vinegar
3 tablespoons of a squeezed lemon or lime
1 tablespoon of agave
Lemon or lime zest
A pinch of salt and pepper
Salad: Combine all ingredients into a bowl. Cook quinoa and add to salad mixture.
Dressing: Mix all vinaigrette ingredients well and pour onto salad mixture.
Toss and serve immediately!
